Masala vadai
My chellamma makes many varieties of tasy vadai. My favourite is Masala vadai (tea kadai style).
Ingredients:
1. Red gram (kadalai paruppu) - 2 cups
2.onions (finely chopped) - 2 cups
3. green chilli finely chopped - 1 spoon
4. Ginger finely chipped - 1 spoon
5.coriander leaves finely chopped - 1 spoon
6. Fresh curry leaves finely chopped - 1 spoon
7. Oil for frying
8. salt
Method:
1. Red gram for two hours. grind in a mixer and keep aside.
2. mix all ingredients together and keep aside.
3. Heat oil in a pan. make small balls and flatten slightly. fry in hot oil.
Yummy tasty masala vadai is ready.

The recipe is obviously good. What I liked best was the tips given along with the recipe. Like how to figure out when oil is ready and what to do if the mixture is too watery. These tips are what beginners like me need the most.
